The original Mighty chef knife uses proprietary high-carbon molybdenum-vanadium steel hardened to 59-61 HRC, producing an edge that holds longer than most German knives and sharpens easier than most Japanese ones. The 2mm spine tapers to a razor-thin edge that glides through produce with minimal resistance, while the dimpled Pakkawood handle provides a secure grip even when wet.
